For making air fryer carrot muffins you only need a handful of ingredients that are already available in your pantry. Let’s gather those ingredients and bake the deliciously moist carrot cake.
Ingredients for air fryer carrot muffins:
- 1 cup flour
- 2 cups fresh carrot (shredded)
- 2 eggs
- ⅔ cup vegetable oil
- ⅔ cup brown sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon cinnamon powder
- ¼ teaspoon salt
- 1 teaspoon vanilla essence
Instruction for air fryer carrot muffins:
- Thoroughly wash the carrots with clean water and peel off the skin. Grate the carrots with the help of a grader and set them aside.
- Now take a mixing bowl to add all-purpose flour, baking powder, baking soda, cinnamon powder, and salt. Mix them until well combined.
- Now, let's prepare the wet batter. Take a mixing bowl to add the eggs and sugar first and mix them with the help of a whisker. Mix them until the sugar is completely dissolved.
- Then add the oil and vanilla essence. Mix them until well combined.
- After the wet batter is ready, add the mixture of flour and mix them until there are no lumps left.
- Now add the shredded carrots to the batter and mix with a spatula.
- Preheat your air fryer at 160C/320F for 5 minutes.
- Fill ⅔ part of the silicon cup or paper cup. At this point, you can add some chopped walnuts or any other dry fruits as per your liking.
- Transfer the air fryer carrot muffins cups to the air fryer basket. Be careful the air fryer basket is hot, don't burn yourself.
- Bake the air fryer cupcake at 160/320F for 10 minutes. Insert a clean toothpick through the middle of the muffin, if it comes out clean the muffins are perfectly cooked. If the toothpick doesn't come out clean you can bake the muffins further for a minuter or two.
- Let the muffins cool for a while. Then you can add the frosting.
- Serve and enjoy your moist, fluffy and delicious air fryer carrot muffins.
