First of all, let me tell you a secret for tender air fryer fried gizzards. The best way of cooking gizzards is at a low temperature.
Most of us might know/heard that boiling the gizzards makes them tender. But actually, boiling them at a very high heat will tighten up the connective tissues of gizzards. Doing that you’ll end up making the gizzards into chewy little balls.
So, what I recommend you do is boil the water first and place the gizzards into the water. Reduce the heat between 185F/85C-200F/90C.
Let them cook over low heat which helps the connective tissues to relax and melt away. This process helps to tenderize the gizzards.
How to clean chicken gizzards?
You can get the pre-cleaned gizzards from the store. But sometimes you might have to clean yourself. So, here's how you clean them.
- There might be some yellow-fat lining over the gizzard. You can gently pull them off.
- After that take a sharp knife to slice the gizzard open. Once the gizzard is open, empty the contents, cut it in half lengthwise, and rinse the inside under cold running water.
- When the gizzard is clean you can see a yellow-tinted lining on the inside. You need to peel it away to remove them from the gizzard's flesh.
- Rinse them once again under the cold water and dry them with a paper towel and they are ready.

How to cook air fryer fried gizzards?
Cooking fried gizzards in the air fryer is easy and quick. You’ll need a few ingredients and you’re good to go. Let’s have a look at the ingredients first.
Ingredients:
- 1lb chicken gizzards
- ¼ cup all-purpose flour
- ¼ cup corn starch
- 2 eggs (beaten)
- Cooking oil/ cooking spray
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and Pepper to taste
Instructions:
- First, follow the instructions given above to clean the gizzards and cut them into bite-size pieces. Try to cut them in similar sizes.
- Take a pot, add the water, and a pinch of turmeric, and bring it to a boil. As soon as the water starts boiling, reduce the heat to medium-low.
- Put the chicken gizzards into the pot and don’t let them boil or they’ll be tough. This process will take 1 or 2 hours to turn the gizzards nice and tender but it’s worth the time.
- After that remove the gizzards from the water and set them aside and let them dry.
- Preheat your air fryer at 200C/400F for 3-5 minutes.
- Take a mixing bowl to add all-purpose flour, corn starch, garlic powder, paprika, salt, and pepper. Mix them well.
- Beat the egg in a separate bowl. I used 2 eggs because the eggs I used were small in size. But if you have a large egg then 1 is enough for the recipe.
- Dip each piece of gizzard into the egg and put in the seasoned flour. Coat them evenly, tap out the excess flour and let them sit for 4-5 minutes.
- Place the coated chicken gizzards in the air fryer basket and lightly coat them with the cooking spray. I was running out of it so I coated them with the vegetable oil with the brush.
- Cook them at 200C/400F for 10 minutes. Toss/shake the basket after 5 minutes and continue cooking for another 5 minutes.
- Remove the air fryer fried gizzards and serve them with your favorite dipping sauce and enjoy.

- Do not boil the gizzards, instead, let them simmer for an hour or two for the best result.

Put the leftover gizzards in the air fryer basket and reheat them at 160C for 7 minutes. You can also add a minute or two until they are crispy.
