- 1 cup oil (vegetable)
- 1 cup sugar
- 1 cup all-purpose flour
- 1 cup raisins
- ½ teaspoon cinnamon powder
- 2 eggs
- 1 teaspoon vanilla extract
- A pinch of Salt
Instructions:
- First, take a mixing bowl to add the oats and flour. Mix the oats, flour, and cinnamon powder well and set aside.
- After that take a separate mixing bowl and add eggs, oil, sugar, and vanilla extract. Mix them well until the sugar is fully dissolved.
- When your dry and wet mixture is ready, add the dry mixture (oats, flour, and cinnamon powder) into the wet mixture. And mix them well but do not over mix them because the gluten gets activated which makes the air fryer oatmeal cookies hard.
- Take a scoop of oats cookie dough on your hand as shown in the picture below. Take some raisins, put them in the middle and roll them to make a ball. After that, flatten them to give a round cookie shape.
- Cookies should be approximately ½ inch thick.
- Meanwhile preheat your air fryer at 180C/360F for 3-5 minutes.
- Place the oatmeal cookies into the air fryer basket and cook them at 180C/360F for 10-12 minutes. Flip them halfway through the cooking process.
- Remove the air fryer oatmeal cookies and serve them for breakfast or I even like to have them as a snack now and then because they are healthy and delicious.
Note: You can also mix the raisins while preparing the dough but, that way the raisins which are on the top get burned. And nobody likes to have a bitter cookie.
