- Eggplant: use 1 larger globe eggplant / 2 small eggplants
- Chickpea Flour: 3 tablespoons
- Paprika: 1 teaspoon
- Garlic powder: 1 teaspoon
- Panko Bread Crumbs: 1 cup
- Water
- Oil
- Salt and Pepper to taste
How to make an air fryer eggplant?
I think the process I’m going to explain to you here might be a little different from the regular ones. But trust me the result is worth it.
Most of us start by salting the eggplants and letting them drain before cooking. I have omitted that process while making this air fryer eggplant recipe. This saves a lot of time and energy. The air fryer eggplants are packed with flavor and you’ll love the texture.
Instructions:
- First, wash the eggplants thoroughly and slice them into a round shape not thicken than ⅓ inches. Set them aside.
- After that take a mixing bowl to add chickpea flour, paprika, garlic powder, salt, and pepper give them a quick mix. Then add 2-3 tablespoons of water at first and gradually add a tablespoon of water later if needed.
- Remember the batter should not be too watery or too thick.
- Now, preheat your air fryer at 200C/400F for 3 minutes.
- Meanwhile, the air fryer is preheating you can start coating the eggplants.
- Take a slice of eggplant dip into the batter following by the bread crumbs. Repeat with the remaining air fryer eggplant slices.
- After that put the coated eggplants in the air fryer basket in a single layer and drizzle with some oil on top. Cook them at 200C/400F for 15 minutes. Flip the air fryer eggplant halfway through the cooking process.
- Cook the eggplants until they are golden brown.
- Remove the air fryer eggplants from the basket and repeat with the remaining.
- Serve and enjoy your crunchy air fryer eggplants.
