Preheat your air fryer at 180C/350F for 5 minutes.
Take a large mixing bowl mash the bananas add egg, olive oil, sugar, vanilla extract, and stir to mix them well.

Add the all-purpose flour and baking soda on top of the mixture and fold together until they combine well.

Line the muffin cups with muffin liners. Split the air fryer banana cake mixture and fill the muffin cups about ½ the way up.
Put them in the air fryer basket carefully and bake at 180C/350F for 10-12 minutes.
