Heat oil in a pan over medium heat and add the minced chicken cook until the water is completely dried, stirring occasionally, and cook the meat completely.
1 pound minced chicken, 2 tablespoons oil
Add minced chicken and cook ginger, and garlic until fragrance for about 30-40 seconds.

Now add the spices, coriander powder, soy sauce, salt, and pepper. Stir and cook until the spices are cooked or until fragrance.

Remove the pan from heat and add the chopped spring onions and stir to mix them.

Meanwhile, preheat your air fryer at 190C/380F for 3 minutes.
Place a spring roll wrapper on the working surface and add spoonfuls of the meat mixture to the center of the wrapper. Arrange the meat mixture parallel to your body.
8-10 spring roll wrappers
Wet the edges of the wrapper with a bit of water using your fingertip. Fold the sides of the wrapper over the filling and fold the bottom end of the wrapper over the filling. Squeezing the filling into the bottom wrapper roll up and make sure it is tight enough to hold on to the shape.
Repeat the process for the rest of the remaining wrapper and filling.
Place the spring rolls in the air fryer basket in a single layer.
Brush or spray a light coat of oil over each spring roll.
Cook them at 190C/380F for 8-10 minutes, until the spring rolls are crispy. Flip them halfway through the cooking process to make sure all the sides are golden brown.
Remove the spring rolls from the basket, and allow them to cool for a while.
Serve them with your favorite dipping sauce and enjoy your crispy spring rolls.
