Warm water, salt, and sugar should be combined in a large mixing bowl. Stir them together until the salt and sugar are completely dissolved. After that, stir in the dry yeast and set aside for 5 minutes.

Now combine the yeast solution with the melted butter and all-purpose flour. Stir them together with a spoon or a dough whisk until the ball forms.

Transfer the dough to a working surface and knead until smooth. If the dough is too sticky, add 1 tablespoon of flour at a time and knead the dough until it forms a soft ball.
Place the pretzel dough in a well-greased bowl and cover with a lid or plastic wrap. Allow the dough to rest for an hour, or until it has doubled in size.
Lightly flour the working surface, place the dough and divide into 6-7 equal pieces.
Roll each dough into a long rope shape and cut them into 1-inch pieces.
Take a large pot add 10 cups of water and add baking soda into the water and bring to a boil.

Drop 9-10 pretzel bites at a time into the boiling water for 15-20 seconds.
Remove the pretzel bites from the soda bath and place them on a plate.
Prepare the egg wash. Mix the egg yolk and one tablespoon of water until combined.

Brush the tops of the pretzel bites with the egg wash and then sprinkle with sugar.
Preheat the air fryer to 200C/400F for 2-3 minutes.
Place the pretzel bites into the air fryer basket in a single layer, do not overcrowd the basket.
Cook the pretzel bites at 200C/400F for 5-6 minutes or until lightly brown on top.
Remove the air fryer pretzel bites and serve them with cheese sauce.
