Ingredients
  

  • 1 cup shredded carrots
  • 2 cups broccoli (only flower part)
  • 1 cup shredded bell pepper (green, yellow, red)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 eggs
  • 2 cups breadcrumbs
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions
 

  • Shred the carrot, steam broccoli for a minute or two in the microwave until tender.

  • Place all the ingredients in the food processor. Pulse for 10-15 seconds until the ingredients combine.
    1 cup shredded bell pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, 2 cups breadcrumbs, 1 tablespoon olive oil, salt and pepper to taste, 2 eggs
  • If the mixture is crumbly add 1-2 teaspoons of water at a time and pulse the mixture until the mixture can easily form into a ball.
  • Preheat your air fryer at 200C/390F for 2-3 minutes.
  • Scoop a tablespoon of mixture to form them in your favorite shape.
  • Place the veg nuggets in air fryer basket in a single layer. Cook at 200C/390F for 10-12 minutes.
  • Flip the nuggets halfway through the cooking process. 
  • Remove the crispy veg nuggets from the air fryer and serve it with your favorite sauce.
