- ½ cup spinach (chopped)
- 1 small tomato (diced)
- 1 small onion (finely chopped)
- ¼ cup mozzarella cheese
- 1 spring onion (finely chopped)
- 1 sausage (cooked and chopped)
- salt and pepper to taste
Take a large mixing bowl crack the eggs and beat them. After that add the vegetables, sausage, salt, and pepper. Mix them well until well combined.

Preheat the air fryer to 160C/320F for 5 minutes.
Take an oven-safe pan that fits in your air fryer basket and brush a generous amount of oil or butter. Then pour the frittata mixture into the pan.
Cook them at 160C/320F for 12-15 minutes.
Let it sit before removing it from the pan to avoid breaking.
