Ingredients
  

  • 2 medium potatoes
  • 1 head of cauliflower (small to medium)
  • 1 medium red onion (chopped)
  • 2 tomatoes (chopped)
  • 1-2 green chilis (chopped)
  • 3 tablespoons vegetable oil
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 1 tablespoon ginger, garlic paste
  • 0.5 teaspoon salt to taste

Instructions
 

  • Let’s prepare the potatoes and cauliflowers by thoroughly washing them with clean water. Peeling the potato skin is completely optional. However, I like to peel the potatoes.

  • Cut the potatoes into cubes or slice them.

  • Cut the cauliflower florets into the bite-size. Make sure to cut the veggies into equal bite-size.

  • Take a large mixing bowl to add potatoes, cauliflower, onion, turmeric, chili powder, coriander powder, garam masala, ginger, garlic paste, salt, and oil. Mix the veggies until evenly coated.

  • Preheat your air fryer at 190C/380F for 5 minutes.
  • Transfer the vegetable mixture into the air fryer basket in a single layer.

  • Cook them at 190C/380F for 10-12 minutes. Toss the veggies halfway through the cooking process.
  • After that add the chopped tomatoes and chilis into the basket toss them and cook for 2-3 minutes more.

  • Remove the air fryer aloo gobi from the air fryer basket, and garnish them with freshly chopped coriander leaves.
