Ingredients
  

Crust Ingredients

  • cup Graham Crackers (or 5 pcs of digestive biscuits)
  • 1 ½ tablespoon Unsalted Butter (melted)

Cream Cheese Filling Ingredients

  • 1 ½ cup Cream Cheese
  • cup Icing Sugar
  • ¼ cup Sour Cream
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Vanilla Essence
  • 2 Eggs
  • 1 cup Whipping Cream
  • ¼ cup Unsalted Butter

Sour Cream Topping Ingredients

  • ½ cup Sour Cream
  • 1 tablespoon Icing Sugar
  • 4 teaspoons Lemon Juice (fresh lemon juice)

Instructions
 

Cake Crust:

  • Take a medium mixing bowl, add the graham cracker, butter, a pinch of salt, and combine them until the crumbs are evenly moist.
    ⅓ cup Graham Crackers, 1 ½ tablespoon Unsalted Butter
  • Spread the butter evenly to the bottom of the pan and place a parchment paper. Then shift the crumbs to the pan and press it into the bottom. Refrigerate it until hard.

Cheesecake Filling:

  • Take a large mixing bowl, add the cream cheese, sugar, and beat them until no lumps are remaining.
    1 ½ cup Cream Cheese, ⅜ cup Icing Sugar
  • Now add the sour cream, vanilla essence, lemon juice, and whisk them until combined. Then beat the eggs and pour the eggs into 3 parts.
    ¼ cup Sour Cream, 1 teaspoon Lemon Juice, 1 teaspoon Vanilla Essence, 2 Eggs, ½ cup Sour Cream
  • After that add the whipping cream and melted unsalted butter to the batter. Mix until they combine.

  • Meanwhile, preheat your air fryer at 150C/302F for 5 minutes.
  • Grease some melted butter on the sides of the cake pan. And pour the cheesecake mixture into the cake pan. Drop the pan lightly to remove any air bubbles.
  • Transfer the cake pan into the air fryer basket. Cook at 150C/302F for 15 minutes. Then lower the temperature to 115C/240F and bake for an additional 30 minutes. In between the transition of temperature do not open the air fryer basket.
  • When the total time is up, turn off the air fryer and let the air fryer cheesecake cool in the air fryer basket for about 15 minutes.

Sour Cream Topping:

  • Take a mixing bowl, add the sour cream, icing sugar, vanilla essence, or add lemon juice if you prefer the citrus taste. Mix until combined.
    1 tablespoon Icing Sugar, 4 teaspoons Lemon Juice
  • Spread the sour cream topping on the cake. Bake at 150C/302F for another 5 minutes and let it rest for 30 minutes.
  • Remove the air fryer cheesecake and leave it to cool completely. It usually takes 2-3 hours. Once cooled, refrigerate the cake for at least 6-8 hours or leave overnight.
  • Slice and serve your delicious air fryer cheesecake and enjoy.
