2 ½ cup mashed potatoes (leftover works perfectly) 2 tablespoons all-purpose flour (gluten-free or regular) 2-3 green onions (diced) 1 egg salt and pepper to taste 1 cup cheddar cheese (optional) 2 strips cooked bacon (optional)
Take mashed leftover potatoes and add flour, diced green onions, egg, salt, and pepper and mix well.
2 ½ cup mashed potatoes, 2 tablespoons all-purpose flour, 2-3 green onions, 1 egg, salt and pepper to taste
If you like to add cheese and bacon you can add them at this moment and mix them well.
1 cup cheddar cheese, 2 strips cooked bacon
Preheat your air fryer at 200C/390F for 2-3 minutes .
Use a large spoon to scoop out the mixture and make it into a patty form.
Flatten the ball to ½ inch thick and place it in the freezer for 8-10 minutes to hold form. (if using fresh mashed potatoes)
After that place the potato patty into the air fryer basket and cook at 200C/390F for 7 minutes on each side.
Remove the air fryer potato pancakes and serve them with your desired toppings and dips.
