Ingredients
  

  • 2 ½ cup mashed potatoes (leftover works perfectly)
  • 2 tablespoons all-purpose flour (gluten-free or regular)
  • 2-3 green onions (diced)
  • 1 egg
  • salt and pepper to taste
  • 1 cup cheddar cheese (optional)
  • 2 strips cooked bacon (optional)

Instructions
 

  • Take mashed leftover potatoes and add flour, diced green onions, egg, salt, and pepper and mix well.

  • If you like to add cheese and bacon you can add them at this moment and mix them well.

  • Preheat your air fryer at 200C/390F for 2-3 minutes
  • Use a large spoon to scoop out the mixture and make it into a patty form.

  • Flatten the ball to ½ inch thick and place it in the freezer for 8-10 minutes to hold form. (if using fresh mashed potatoes)
  • After that place the potato patty into the air fryer basket and cook at 200C/390F for 7 minutes on each side.
